"Doc" status has been obteined in 1986 year, "Dop" since 2000 as status registered by E.U.
It is obteined by slow cooking of grape musts, from local varieties only and no additivies with a natural fermentation and acetification.
The long aging of this unique product is made intosmall barrels made of different type of woods and showing different sizes and capacity as well. bright, full dark brown colour, high density mean a very strict process of manufacture, now certified at every step.
Unique " Balsamic "lowely on meat dishes, rice, soft cheeses, ice creams, strawberries, and many other dishes to be enriched with this deliciousness.
